Uncle Ben’s Chicken and Rice

Prep: 15 minutes | Cook: 1 1/4 hours | Servings: 6 to 8 people

Ingredients

  • 1 (6 ounce) package Uncle Ben’s Long Grain and Wild Rice
  • 1 frying chicken or equivalent pieces
  • 1 can of Cream of Chicken soup
  • 2 1/2 cups water

Directions

  1. Sprinkle rice mix on bottom of buttered 9×13 inch pan.
  2. Combine soup, seasoning packet from rice and water.
  3. Place chicken on top of rice and pour soup mixture over all.
  4. Bake at 350 degrees for 1 and 1/4 hours (75 minutes).

    I used the amount of water that was in the recipe. It’s way too much water for approximately 6 Oz of rice . Next time I’ll use 1/12 cups of water. Way too runny!

    I’ve used this recipe for years, but always use 4-6 who.e boneless breasts, the uncle bens wild ice with seasoning packet, 1 can cream of mushroom & 1 can cream of chicken soup with I soup can full of milk plus about 1/4 extra water,I salt & pepper my chicken & then mix all ingredients. Placed seasoned chicken breasts into a 9 X 13 casserole dish, pour rice mixture over the chicken, cover tightly with foil. Place casserole into the oven preheated to 350 and cook for 90 minutes. It is usually delicious. I sometimes cut my chicken breasts in half I’d they’re large.
