Tasty Tuscan Butter Mushrooms

  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 pound baby bella mushrooms, cleaned
  • 1 cup cherry tomatoes, halved
  • 1/4 cup heavy cream
  • 1/4 cup freshly grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8-1/4 teaspoon crushed red pepper flakes
  • 3 cups fresh spinach
  • chopped fresh basil, for garnish


  1. Melt butter in large skillet over medium heat. Add garlic and tomato paste and cook until fragrant (about 1 minute). Add mushrooms and tomatoes and cook until mushrooms are tender and tomatoes are starting to burst, about 5 minutes. Add heavy cream and parmesan, and season with salt, pepper and crushed red pepper flakes. Bring to a simmer. Add spinach and cook until sauce is thickened and spinach is wilted, about 5 minutes. Garnish with basil before serving. Enjoy!!
