Cool Beans

Prep: 10 minutes | | Servings: 3-4 people

Ingredients

  • 2 cans of corn, drained
  • 2 cans of black beans, drain & rinse
  • 1/4 cup apple cider vinegar
  • 1/4 cup light olive or canola oil
  • 1/4 cup white sugar

Directions

  1. Add vinegar, oil, and sugar to bowl and mix. Let sit 10 minutes.
  2. Put corn and beans in seal-able container. Add oil mix to corn mix and stir.
  3. Put in fridge overnight, stirring occasionally. Let come to room temp before serving. The best pairing is scoop type tortilla chips!
