Chocolate Crinkle cookies

Ingredients

  • 3/4 cups vegetable oil
  • 1 cup cocoa powder
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup confectioners sugar

Directions

  1. Mix oil, chocolate and sugar. Blend in eggs one at a time. Add vanilla and dry ingredients. Chill overnight.
  2. Drop teaspoonfuls of dough into confectioners sugar. Roll in the sugar and form into balls.  Place on a greased cookie sheet and bake at 350 for 10 minutes.  Do not over bake.

    I love this recipe. I roll in course sugar instead of powder sugar so they sparkle. They are even better with a cup of walnuts and/or dry cherries in the mix.
