Blue Cheese Burgers

  • 1 1/2 ounces cream cheese, softened
  • 1 1/2 ounces blue cheese
  • 1 1/2 teaspoons chopped fresh chives or finely chopped onion
  • 1 1/2 pounds ground beef
  • 1/4 cup dry breadcrumbs
  • 1 egg
  • 6 sandwich buns
  • Toppings of choice: lettuce, tomatoes, pickles, onions, sauteed mushrooms/onions, etc.

Heat grill. In a small bowl, combine the cream cheese, blue cheese and chives/onion; mix well. In a large bowl, add the ground beef, breadcrumbs, and egg and mix until fully combined. Shape burger mixture into 12 (3-1/2 inch) patties. Place 6 patties on waxed paper. Top each patty with about 1 tablespoon filling mixture. Place remaining patties over fillings; press edges to seal. When ready, place the prepared patties on a gas grill over medium heat, or a charcoal grill 4 to 6 inches from medium coals. Cook 10 to 15 minutes or until longer pink, turning once. Serve burgers on sandwich buns with chosen toppings.
