Barbara’s Brunch

  • 2 English muffins, split and toasted
  • 4 hard boiled eggs, peeled
  • 4 cups washed baby spinach, packed
  • 2 tablespoons chopped onions
  • 2 tablespoons chopped red pepper
  • 1 3-ounce package cream cheese, mashed with a fork
  • 1/3 to 1/2 pound sliced ham (leftover or deli ham is fine)
  • 1/2 pound provolone or pepper jack cheese, sliced


  1.  Place English muffins on a baking sheet
  2. Saute onions and pepper in a small skillet until softened
  3. Add spinach and saute until wilted
  4. Salt and pepper to taste (Greek or Italian seasoning is also good, about 1/2 t)
  5. Remove from heat and set aside to cool slightly
  6. Divide ham among English muffin halves
  7. Add spinach to cream cheese and mix well
  8. Divide the mixture between the English muffin halves
  9. Slice the eggs and arrange on top of the spinach
  10. Cover with cheese
  11. Bake until cheese is melted, about 8 to 10 minutes

    The oven temperature was left off this recipe. It should be 425.
