Ingredients
- 2 English muffins, split and toasted
- 4 hard boiled eggs, peeled
- 4 cups washed baby spinach, packed
- 2 tablespoons chopped onions
- 2 tablespoons chopped red pepper
- 1 3-ounce package cream cheese, mashed with a fork
- 1/3 to 1/2 pound sliced ham (leftover or deli ham is fine)
- 1/2 pound provolone or pepper jack cheese, sliced
Directions
- Place English muffins on a baking sheet
- Saute onions and pepper in a small skillet until softened
- Add spinach and saute until wilted
- Salt and pepper to taste (Greek or Italian seasoning is also good, about 1/2 t)
- Remove from heat and set aside to cool slightly
- Divide ham among English muffin halves
- Add spinach to cream cheese and mix well
- Divide the mixture between the English muffin halves
- Slice the eggs and arrange on top of the spinach
- Cover with cheese
- Bake until cheese is melted, about 8 to 10 minutes
