Chicken Fried Rice

Ingredients

  • 1/4 cup vegetable oil, divided
  • 2 eggs, lightly beaten
  • 1 tablespoon sesame oil
  • 1 cup diced, cooked chicken
  • 1/2 large red bell pepper, finely chopped
  • 1/2 large sweet onion, finely chopped
  • 1/2 cup peas, frozen or fresh
  • 3 cups cooked white rice (or brown)
  • 1 teaspoon chili-garlic sauce
  • 1/4 cup soy sauce
  • 4 green onions, chopped

Directions

  1. In a large skillet or wok over medium heat, add 1 tablespoon of the vegetable oil. Add eggs and cook 1 minute on each side. Remove and chop. Set aside.
  2. To the skillet/wok, add the remaining vegetable oil and sesame oil.  Add chicken and stir-fry 1 minute. Add red pepper and onion. Stir-fry 5 minutes or until onion is translucent. Add peas, cooked rice, chili-garlic sauce and soy sauce.  Stir-fry 3-4 minutes.
  3. Add cooked eggs and stir until combined. Sprinkle in the green onions; stir.
  4. Serve immediately.

    Made this for dinner last night and it was delicious! Cut the recipe in half because it’s just my wife and myself.
    Had just enough leftover for a couple of servings!
