Zucchini Bread

  • 3 eggs
  • 2 cups sugar
  • 2 cups zucchini, grated
  • 1 cup oil
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons vanilla
  • 3 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup chopped nuts, optional

Preheat oven to 325 F. Beat eggs. Stir in sugar. Add zucchini. Add oil. Stir in remaining ingredients. Transfer to 2 loaf pans. Bake 1 hour at 325 F.
