Zesty Oven-Baked Potatoes

Prep: 10-15 minutes | Cook: 45 minutes | Servings: 4-6 servings


  • 4 baking potatoes, scrubbed
  • oil
  • 2 tablespoons butter
  • 1/4 cup Italian dressing


Heat oven to 325 F. Rub skins of potatoes with oil. Cut in half, lengthwise. Score cut side of potato in a diamond pattern (1/2 inch cuts). Place butter in 13 x 9 inch pan. Heat for 3-5 minutes until butter is melted. Place potatoes, cut side down in melted butter. Bake for 40 minutes or until tender. Remove from oven. Turn potatoes cut-side up. Brush with 2 tablespoons Italian dressing. Return to oven for 5 minutes. Remove and brush with remaining dressing. Enjoy!
