Tasty Blueberry Pancakes

Prep: 10 minutes (approx.) | Cook: 20 minutes (depending on sixe of pan) | Servings: 1-2 pancakes

Ingredients

  • 1 1/4 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 1 cup milk
  • 2 tablespoons olive oil
  • 2 cups fresh or frozen blueberries

Directions

  1. Sift together dry ingredients.
  2. Combine egg, milk, and oil; add to dry ingredients, stirring just until moistened.
  3. Bake on hot griddle.
  4. Makes 8-12 pancakes. (For thinner pancakes add two tablespoons milk to batter.)
