Taco Soup Chili

Recipe by
Presque Isle Electric & Gas Co-op

Ingredients

1 pound ground beef
1 medium onion, chopped
1 package (1.5-ounce) ranch dressing mix
1 package (1-ounce) taco seasoning mix
3 (14.5-ounce) cans petite diced tomatoes
2 (14.5-ounce) cans black beans
2 (14.5-ounce) cans corn
1 (14.5-ounce) can cream-style corn
1/2 bunch fresh cilantro, chopped

Directions

In a large pot or Dutch oven, brown the beef with the onions; drain grease. Add the remaining ingredients (just dump in whole cans, don’t drain). 🙂 Cook over medium high heat until slightly simmering and hot, about 10-15 minutes. Serve with sour cream, cheese, and tortilla chips!!

I tried this cutting down 1 can of black beans, tomatoes, and corn. We were disappointed that we couldn’t taste the taco seasoning or the Ranch. Leaves it kind of bland and it would be more so with more cans but we are just two seniors.
