- 2 cups cooked white rice, cooled
- 1 cup shredded mozzarella cheese
- 3 tablespoons grated Parmesan cheese
- 1 egg, slightly beaten
- 1/4 teaspoon dried Italian herb seasoning
- marinara sauce
Preheat oven to 350 F. Grease a large, rimmed baking sheet, or cover with parchment paper. In a medium bowl, stir together rice, cheeses and egg. Shake the Italian seasonings on top and blend into rice mixture. Wet hands and scoop up enough of the mixture to form 1-1/2 inch balls. Place balls onto prepared baking sheet about 2 inches apart. Bake in preheated oven 20-25 minutes. Remove from oven and allow to cool 5-6 minutes. Place a small bowl in the center of a serving platter to hold the warm marinara sauce. Transfer the warm rice balls to the platter with a spatula, and place around the marinara dish. Put out some toothpicks and small plates out for guests to serve themselves. Makes about 15-20 balls.
