- 2 cups whipping cream
- 1 (5-ounce) container Boursin cheese with herbs
- 3 pounds red potatoes, unpeeled and sliced
- 2 tablespoons fresh parsley
Preheat oven to 400 F. Butter a 9×13 baking dish. Stir whipping cream and boursin in heavy saucepan over medium heat until the cheese melts and mixture is smooth. Arrange 1/2 of the sliced potatoes in baking dish, slightly overlapping rows. Season potatoes with salt and pepper. Pour 1/2 of the cheese mixture over and repeat arrangement. Bake uncovered until the top is golden brown and potatoes are tender, about 1 hour. Sprinkle with fresh parsley and serve. Serves 8. Delicious and easy to prepare.
