- 1 rotisserie chicken
- 1 sweet onion
- 2 cans hominy
- 2 cans of chili beans in mild or medium sauce (your choice)
- 1 tablespoon oregano
- 2 tablespoons cumin
- 24 ounces chicken stock
- salt and pepper, to taste
- cubed or shredded cheese, shredded lettuce, croutons, tortilla chips, warm bread, etc
Directions
Shred and trim all of meat from rotisserie chicken, saving the juices. Chop onion and sauté in pan with butter, just to soften a bit but keeping some crunch. Combine all ingredients including juices from chicken, bring to a boil then lower temp and simmer until serving. Serve with optional toppings.
