Nene’s Potato Soup

Ingredients

  • 3 medium potatoes, peeled and cubed
  • 2 cups water
  • 1 small onion, diced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • 3 tablespoons sugar
  • 1 cup cheddar cheese, shredded
  • 1 cup bacon, cooked and crumbled
  • 1/4 teaspoon freshly ground black pepper
  • cayenne pepper, to taste

Directions

In a large pot, boil the cubed potatoes in water for approximately 10 minutes (until tender but not soft). Drain potatoes, reserving liquid. Set potatoes and reserved liquid aside. Melt butter in saucepan over medium heat. Sauté diced onion in butter until translucent and tender (but not brown). Add flour to saucepan. Season with black pepper and cayenne pepper, to taste. Add 1 cup reserved liquid into saucepan, stirring continuously. Add milk to saucepan, stir until slightly thickened. Add boiled potatoes and sugar to saucepan. Add cheese and bacon to saucepan. Simmer over low heat 30 minutes, stirring frequently. Serve warm (with homemade rolls and butter!).
