Nana’s Sour Cream Rhubarb Pie

Ingredients

  • 1 unbaked pie crust
  • 5 cups chopped rhubarb
  • 1 egg
  • 3/4 cup sugar
  • 1 cup sour cream
  • 1/3 cup flour
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup melted butter

Directions

  1. Shape pie crust into pie plate.
  2. Mix egg, 3/4 cup sugar, sour cream, and flour. Evenly coat chopped rhubarb with mixture and place in the unbaked pie crust.
  3. Mix 1/2 cup flour, brown sugar, and butter until crumbly. Sprinkle on top of rhubarb.
  4. Bake at 450 degrees for 15 minutes and afterwards 350 degrees for 40 minutes. Watch edges and cover as needed to avoid over darkening.
  5. Serve warm immediately.

    the amounts for the crumble topping are wrong.Need a minimum of 1c flour to offset the 1/2 c of butter. I made it as directed and it was liquid until I added more flour.
