- 3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3/4 cup margarine
- 1 cup Michigan maple syrup
- 2 eggs
- 1 teaspoon vanilla
- 1/3 cup evaporated milk
- 3 cups finely chopped cooking apples
- 1 cup chopped walnuts
- 1 1/3 cups white sugar
Topping:
- 3/4 cup brown sugar
- 1/2 cup maple syrup
- 1/4 cup evaporated milk
- 1/2 cup coconut
- 1 tablespoon flour
- 1 stick margarine
- 1 teaspoon vanilla
Directions
- Sift together dry ingredients. Cream together margarine and sugar. Blend in maple syrup Beat in eggs and vanilla. Gradually add in dry ingredients and milk. Beat until well blended. Stir in apples and walnuts Pour into greased and floured cake pans or a 9×13 pan or in two loaf pans. Bake 350 F for 40-45 minutes until center is done
APPLE CAKE TOPPING DIRECTIONS:
- Combine all ingredients except vanilla and coconut in a saucepan.
- Bring to a boil and cook while stirring for about 8 minutes.
- Remove from heat and stire in vanilla and coconut.
- Beat for 2 to 3 additional minutes.
- Spread between layers and over the top of the warm cake.so that it drips over the sides.
