Mashed Potato Chocolate Bon-Bons

| Servings: depending on the size could be 12-24 pieces


  • 3/4 cup mashed potatoes, real or instant, plain
  • 4 cups or 1 pound flaked coconut
  • 1 teaspoon almond extract
  • 1 pound Powdered sugar
  • chocolate coating of your choice (I use dark chocolate)


  1. Mix the first 4 ingredients. Mixture will be sticky. Roll into small balls, transfer to cookie sheets on wax paper; put in freezer until firm.
  2. Dip in chocolate coating and place on wax paper, once set put in an airtight container.
  3. Enjoy.
