Greek Chicken

  • 6-8 boneless, skinless chicken breasts
  • olive oil or butter (your preference)
  • 1 onion, thinly sliced
  • 2-4 garlic cloves, minced
  • 2 cans chopped Italian-style tomatoes
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • feta cheese
  • 1 can black olives
  • 2 cans quartered artichokes


Brown chicken breasts in oil or butter in frying pan. Season with salt and pepper. Transfer to baking dish. Add more oil or butter to pan, sautéed the sliced onions and garlic. Add the canned tomatoes and blend in spices to the onions and garlic. Heat the tomato mixture then pour over chicken breasts in baking dish. Put in oven at 350 F for 30 minutes. Sprinkle feta cheese, olives and artichokes over the top. Put back in oven and bake for another 15 minutes. Serve with orzo, couscous or rice.
