Gorgeous Cherry and Sunflower Seed Kale Salad

Prep: 10 minutes | | Servings: 4 (1 1/2 cups) servings
  • 1 1/2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 6 ounces baby kale
  • 1/4 cup dried cherries
  • 1/4 cup sliced red onion
  • 2 tablespoons sunflower seeds

Combine vinegar, olive oil, Dijon mustard, honey, salt and pepper in a large bowl. Add kale, dried cherries, onion and sunflower seeds. Toss and enjoy!
