Fabulous Cajun Corn on the Cob

45 minutes in oven, 20-25 minutes on grill
Prep: 15 minutes | Cook: 30 minutes in oven, 10-15 minutes on grill | Servings: 4 servings
  • 4 ears of corn, husked and silked
  • 2 tablespoons olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon lime juice
  • chopped parsley or cilantro, for garnish

Preheat oven to 425 F or grill for direct heat. Mix olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt and pepper. Brush onto corn. Wrap corn in foil and bake for 30 minutes, or grill for 10-15 minutes. Meanwhile, mix together the mayonnaise, sour cream, and lime juice. When corn is finished baking, brush the mayo mixture onto the cooked corn. Garnish with parsley or cilantro Serve warm. Enjoy!!
