Everett’s Mac and Cheese Soup

Prep: 10 minutes | Cook: 20 minute | Servings: 6-8 servings

Ingredients

  • 3 cups reduced sodium chicken broth
  • 2 cups half and half
  • 1 cup uncooked macaroni
  • 4 ounces cream cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 6 ounces cheddar-jack cheese
  • 2 teaspoons chopped chives

Directions

  1. In a large saucepan, combine chicken broth and half and half.
  2. Bring to a simmer.
  3. Stir in macaroni.
  4. Cook over medium-low heat for 15 minutes or until pasta is al dente.
  5. Stir in cream cheese, garlic powder, pepper, and cheese.
  6. Cook on low, stirring often until thickened and creamy.
  7. Enjoy!!
