Creamy Ham and Noodles

Ingredients

  • 1/4 cup butter
  • 1/2 cup chopped onion
  • 2 1/2 cups milk
  • 4 cups cooked diced ham
  • 1/2 cup chopped green pepper
  • 1/4 cup flour
  • 3 cups cottage cheese
  • 8 ounces cooked egg noodles
  • homemade bread crumbs or crushed ritz crackers
  • salt and pepper to taste

Directions

  1. Melt butter, add green peppers, and onions, cook until tender.
  2. Blend in flour, salt and pepper
  3. Gradually add milk and cottage cheese;  cook and stir over medium heat to boiling point  continue to cook for 1-2 minutes or till mixture thickens
  4. Add ham and cooked noodles mixing well
  5. Pour all into a greased casserole dish
  6. Bake at 350 for one hour.
  7. If desired top with homemade bread crumbs or cracker crumbs about 15 minutes before removing from heat
  8. Serves 10-12
