Creamy Fruit Jello

  • 1 small box gelatin
  • 3/4 cup boiling water
  • 3/4 cup cold milk
  • 3/4 cup fruit which goes well with the gelatin flavor (i.e. strawberries, fresh or canned oranges, black cherries, fresh or canned pears with lime gelatin)
  • 3/4 cup cottage cheese

Dissolve gelatin in water. Stir in cold milk and chill until partially set. When partially set, place in blender and blend in cottage cheese until smooth. For a smooth dessert, add fruit at this point and blend until desired smoothness. If you prefer, stir in chopped fruit. Let set until firm and serve with whipped cream or topping. LOW CALORIE OPTION: Use sugar-free gelatin, skim milk, and low or fat free cottage cheese.
