Chicken Chili

Ingredients

  • 3  medium-size chicken breasts
  • 2 (15-ounce) cans black beans (drained)
  • 15-ounce can corn, drained
  • 22-ounce packet chicken chili seasoning
  • 2 (15-ounce) cans (white) ranch-style beans, undrained
  • 2 (15-ounce) cans diced tomatoes, undrained
  • 10-ounce can Rotel tomatoes w/ chili greens, undrained

Directions

  1. Add raw chicken into crockpot with all remaining ingredients. Cook 8 hour on low heat.
  2. Shred chicken in crock pot before serving.

Note: I have used fresh (cut-up) tomatoes but I prefer the can, as it’s much easier. I have also added my own seasoning instead of using the packet but prefer the taste better as noted above. You can also pre cook your chicken and cut into chunks and place in pot if preferred. This makes a good amount and plenty of leftovers.  I use this recipe at our motorcycle gatherings and everyone loves it.
