Cherry Tomato Pasta Salad

Ingredients

  • 8 ounces orzo (1/2 a 1-pound box)
  • 3 garlic cloves, minced
  • 1 pint yellow cherry tomatoes, finely chopped
  • 1 pint red cherry tomatoes, finely chopped
  • 1 small can sliced black olives, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 1/4 cup fresh basil leaves, finely chopped
  • 2 Persian cucumbers, finely diced
  • 3 garlic cloves, minced
  • 1/4 cup white wine vinegar
  • 3 tablespoons extra virgin olive oil
  • kosher salt
  • fresh ground black pepper

Directions

  1. Prepare pasta per package directions.
  2. Mix the pasta, herbs and vegetables together.
  3. To make the dressing, shake the garlic, vinegar and olive oil in a jar.  Pour over the salad and mix well.
  4. Serve immediately.
