Ingredients
- 8 ounces orzo (1/2 a 1-pound box)
- 3 garlic cloves, minced
- 1 pint yellow cherry tomatoes, finely chopped
- 1 pint red cherry tomatoes, finely chopped
- 1 small can sliced black olives, finely chopped
- 2 tablespoons fresh chives, finely chopped
- 1/4 cup fresh basil leaves, finely chopped
- 2 Persian cucumbers, finely diced
- 3 garlic cloves, minced
- 1/4 cup white wine vinegar
- 3 tablespoons extra virgin olive oil
- kosher salt
- fresh ground black pepper
Directions
- Prepare pasta per package directions.
- Mix the pasta, herbs and vegetables together.
- To make the dressing, shake the garlic, vinegar and olive oil in a jar. Pour over the salad and mix well.
- Serve immediately.
