Cheesy Breakfast Cassarole

Prep: 15 minutes | Cook: 30 minutes | Servings: 1/12 of the pan.

Ingredients

  • one dozen eggs
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 pound grated Monterey jack cheese (have made it with cheddar)
  • 1 pint creamed cottage cheese
  • 2 cans chopped green chilies- drained
  • may add sausage or ham if desired

Directions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a large bowl and mix well.
  3. Pour in a greased 13X9 pan.
  4. Bake 25-30 minutes until center doesn’t shake.
  5. Serve immediately.
