Black Bottom Cupcakes

Ingredients

  • 8 ounces softened cream cheese
  • 1/3 cup sugar
  • 1 egg
  • 1/8 teaspoon salt
  • 6 ounces chocolate chips
  • 2 1/4 cups flour
  • 1 1/2 cups sugar
  • 1/4 cup  and 2 tablespoons cocoa
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 1/2 cups water
  • 1/3 cup and 2 tablespoons vegetable oil
  • 1 1/2 tablespoons vinegar
  • 1 1/2 teaspoons vanilla

Directions

  1. Beat together cream cheese, sugar, egg and salt.  Stir in chocolate chips and set aside.
  2. Beat together flour, sugar, cocoa, baking soda, salt, water, oil, vinegar and vanilla.
  3. Insert 24 cupcake papers in muffin pans.  Fill each half way with chocolate batter.  Add one heaping teaspoon of cream cheese mixture on top of chocolate batter.
  4. Bake 25 – 30 minutes in preheated 350 F oven or until toothpick inserted in chocolate batter is clean.
