- 1/2 pound bacon, cut into small pieces
- 1 large onion, diced
- 4 large potatoes, peeled and cut into chunks
- 1 pound kielbasa (smoked or fresh, or 1/2 pound each), cut into 2-inch pieces
- 1 (32-ounce) jar sauerkraut, drained, juice reserved
water, as needed
In a skillet over medium heat, cook the bacon until crisp. Remove the bacon and reserve the drippings in the skillet. Place the potatoes in the bottom of a slow cooker and top with the cooked bacon. Add the onion to the reserved bacon drippings and sauté until tender. Pour the onion and bacon drippings over the potatoes. Add the kielbasa and top with the sauerkraut. Cover and cook on low for 8 hours. If the mixture becomes dry during cooking, add some of the reserved sauerkraut juice for additional tanginess or water for a milder flavor. Serve warm. Note: This is our Polish family’s heirloom recipe. It’s served at every holiday meal, family party, or anytime we have a crowd to feed.
