Rice-a-Rolly Appetizers

  • 1 cup shredded Mozzarella cheese
  • 2 cups cooked white rice, cooled
  • 1 egg, slightly beaten
  • 3 tablespoons grated Parmesan cheese
  • 1/4 teaspoon dried Italian herb seasoning
  • marinara sauce

Preheat oven to 350 F. Grease a large, rimmed baking sheet, or cover with parchment paper. In a medium bowl, stir together rice, cheeses and egg. Shake the Italian seasonings on top and blend into rice mixture. Wet hands and scoop up enough of the mixture to form about 1-1/2 inch balls. Place balls onto prepared baking sheet about 2 inches apart. Bake in preheated oven 20-25 minutes. Remove from oven and allow to cool 5-6 minutes. Place a small bowl in center of serving platter to hold the warm marinara sauce. Transfer the warm rice balls to the platter with a spatula, and place around the marinara dish. (Put out some toothpicks and small plates out for guests to serve themselves).
Makes about 15-20 balls).
