Zucchini Chocolate Chip Muffins

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 egg, lightly beaten
  • 1/2 cup oil
  • 1/4 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • 1/2 cup mini sweet chocolate chips

Preheat oven to 350 F. In a medium bowl, combine the flour, sugar, baking soda, cinnamon, and salt. In a separate medium bowl, mix together the egg, oil, milk, lemon juice, and vanilla. Add the wet ingredients to the dry ingredients. Stir until just moistened. Fold in the zucchini and chocolate chips until just combined. Fill into prepared muffin cups until 2/3 full. Bake 20-25 minutes at 350 F.
