- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 6 ounces baby kale
- 1/4 cup dried cherries
- 1/4 cup sliced red onion
- 2 tablespoons sunflower seeds
Combine vinegar, olive oil, Dijon mustard, honey, salt and pepper in a large bowl. Add kale, dried cherries, onion and sunflower seeds. Toss and enjoy!
