Ingredients
- 2 large sweet potatoes
- 1 cup dry (uncooked) quinoa
- 1/2 red bell pepper, finely chopped
- 1/4 small red onion, finely chopped
- 1/2 cup finely chopped kale
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 tablespoon oil
Directions
Bake, boil or microwave the sweet potatoes until soft. Discard skin and mash. Set out to cool. Cook 1 cup of quinoa as per packet instructions. Set out to cool. In a bowl, add the mashed sweet potato, cooked quinoa, chopped bell pepper, chopped onion, chopped kale, minced garlic, dried thyme and pepper. Mix everything together well. When cool enough to handle, take 1/2 cup of the mixture and form into patties. Preheat the oven to 400 F. Line a baking sheet with parchment paper. Brush the patties liberally with oil of choice, then place them on the baking sheet and bake until the patties are deeply golden on the outside, about 35 minutes, flipping halfway. Patties can be made ahead of time and refrigerated or frozen for fast meals.

My patties were real “wet”. Cooking now for 1 hour to dry them out. Maybe my potatoes were too large? Cant flip them- they fall apart. But smell wonderful! Ill try again with smaller sweet potatoes.
Pleasantly surprised my entire family enjoy this sweet potato quinoa Burger! I made sure to to get it nice and crispy in the oven. Was able to make 9 patties / cooked 5 and froze 4 for future!
my cooked quinoa made 3 cups. How big are the sweet potatoes. What would the measurement be?
Hi Carole, yes 1 cup dry quinoa makes 3 cups so that is correct. For the sweet potatoes, it is roughly 2 to 2 1/2 cups. =) Thanks!
