Omelet Muffins

Prep: 10-15 minutes | Cook: 20-25 minutes | Servings: 1 muffin

Ingredients

  • Favorite omelet toppings (onions, mushrooms, green pepper, tomatoes, bacon, ham, etc.)
  • grated sharp cheddar cheese, as desired
  • 1/2 teaspoon vegetable oil
  • 1/2 teaspoon baking powder
  • 1/4 cup milk
  • 6 beaten eggs

Directions

  1. Spray muffin tin with non-stick spray. Spoon in favorite omelet toppings.
  2. Add grated cheese.
  3. Mix oil, baking powder, milk and eggs. Pour in muffin tins.
  4. Bake in 375 F 0ven for 20-25 minutes. Let rest 5 minutes before serving
