Joy’s bacon pasta toss recipe was a winning entry for our April issue. Here’s the inside scoop on the recipe and the chef herself.
The story behind the winning recipe:
Where did your recipe come from?
I went to a pampered chef party where they distributed a similar version of the recipe. The original recipe called for using their microwave pans. I didn’t end up buying the pans, so when I went home I revamped the recipe and made it with my own pans on the stovetop.
When do you usually make it?
It works great for a quick and easy weekday family dinner.

What do you do for work?
I work in customer service.
What do you do for fun?
I read. I read all kinds of books, but mystery/suspense are my favorite.
How would you classify your cooking style?
Flavor-blasted. I make a lot of PuertoRican food. My grandparents are Puerto Rican and they passed their cooking traditions down to me. Now I try to keep it going so my kids have a taste of it too.
What’s your go-to spice?
Goya adobo all purpose seasoning. It’s the perfect blend of garlic, oregano, salt and pepper.
I have tried Joy’s recipe first hand and it is wonderful. I tried making it at home and did not use the same seasoning and it made a huge difference. The next time I used her seasoning it tasted just like her’s – wonderful!
