Ingredients
- 1 package chicken stuffing
- 6 cups sliced zucchini
- 1/4 cup chopped onion
- 15 ounce can of mushroom soup
- 1 cup sour cream
- 1 cup shredded carrots
- 1/2 cup melted butter
Directions
- Prepare chicken stuffing according to package directions. Fill a saucepan with salted water and bring to a boil. Add sliced zucchini and chopped onion. Boil for 5 minutes; drain well. In a bowl, combine soup and sour cream. Stir in carrots. Fold in drained zucchini and onion. Combine stuffing with butter. Spread 1/2 of the stuffing mix in bottom of 10 x 7 x 2 inch baking pan. Spoon zucchini on top. Sprinkle remaining stuffing on top. Bake 350 F for 30 minutes. Serve immediately.
