Ingredients
- 2 tablespoons olive oil
- 1 red bell pepper, chopped
- 1/4 cup chopped onion
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon minced garlic
- 1 10-ounce bag spinach, washed and coarsely chopped
- 12-inch pizza crust
- 1 1/2 cups shredded mozzarella cheese, divided
Preheat oven to 450 F. Heat olive oil in a large skillet over medium heat. Add red pepper, onion, salt and pepper. Cook until tender, 3 to 5 minutes, stirring occasionally. Add garlic; cook and stir 1 minute. Add spinach; cook and stir until wilted. Sprinkle pizza crust with 1 cup of the mozzarella. Distribute spinach mixture evenly over crust. Sprinkle the remaining 1/2 cup of mozzarella over the spinach layer. Bake 10 minutes. Slice into pieces and serve.
