- 1/2 cup shortening
- 1 1/2 cups brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cup cooked pumpkin
- 2 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup raisins
Cream together the first five ingredients in a large bowl. Set together dry ingredients in medium bowl and gradually add to creamed mixture. Add raisins, if desired. Drop by teaspoonful onto a greased cookie sheet. Bake at 350 F for 15 minutes or until done.
