Ingredients
- 1 cup finely crushed Ritz Crackers for crust
- 1/2 stick butter, melted
- 2 cup thinly sliced Vidalia onions
- 2 tablespoons butter
- 2 eggs
- 3/4 cup milk
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup sharp cheddar cheese
- 1/8 teaspoon paprika
- 1/8 teaspoon parsley
Directions
Mix cracker crumbs and 1/2 stick of melted butter. Press into an 8-inch pie plate. Sauté onions in 2 T butter until clear, not brown. Spoon into crust. Beat eggs together with milk, salt, pepper, and pour over onions. Sprinkle with cheese and paprika. Bake at 350 F for 30 minutes or until a knife inserted in the center comes out clean. Sprinkle with parsley before serving. Serve immediately.
