Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter, softened
- 1 1/2 cups granulated sugar
- 1 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla
Glaze:
- 2 cups sifted powdered sugar
- 3 tablespoons milk
- 1 tablespoon melted butter
- 1 teaspoon vanilla
Directions
- Preheat oven to 350 F.
- Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl.
- Beat sugar and butter in large mixer bowl until well blended.
- Beat in pumpkin, egg, and vanilla until smooth.
- Gradually beat in flour mixture until thoroughly combined.
- Drop by rounded tablespoons onto greased baking sheets.
- Bake in preheated oven at 350 F for 15 to 18 minutes, or until edges are firm.
- Cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.
- Drizzle glaze over cookies.
- Preparation of Glaze:
- Combine all glaze ingredients in a small bowl.
- Mix until smooth.
- Use a spoon, or a baggie with a small hole cut in the corner to drizzle the glaze over the cookies.
