- 1 medium red onoin, minced
- 1 medium bell pepper, diced
- 1 medium eggplant, diced
- 1 small zucchini, diced
- 4 cloves garlice, minced
- 1/2 cup chopped basil
- 1 large tomato, diced (or 1 can diced tomato)
- salt and pepper
Sauté onion for 10 minutes. Add pepper, eggplant, zucchini, and garlic. Cook covered 15 minutes. Stir occasionally. Stir in basil, tomato, salt and pepper. May serve on rice, mashed potato or couscous.
