Ingredients
- 2 cups bowtie pasta
- Spinach leaves, as much as desired
- 1 cup pine nuts
- Assorted veggies, as desired
- 1/4 cup vegetable oil
- 1/4 cup vinegar
- dash of salt
- 1/2 cup sugar
- 1 tablespoon mayo
Directions
- In a large pot of boiling water, prepare pasta until al dente. Cool completely.
- In a small mixing bowl or jar, whisk or shake vegetable oil, vinegar, sugar, salt and mayo.
- Toss dressing in bowl with pasta, spinach leaves, pine nuts and veggies.
- Refrigerate until serving.
