Pasta Voila!!

Ingredients

  • 2 cups bowtie pasta
  • Spinach leaves, as much as desired
  • 1 cup pine nuts
  • Assorted veggies, as desired
  • 1/4 cup vegetable oil
  • 1/4 cup vinegar
  • dash of salt
  • 1/2 cup sugar
  • 1 tablespoon mayo

Directions

  1. In a large pot of boiling water, prepare pasta until al dente. Cool completely.
  2. In a small mixing bowl or jar, whisk or shake vegetable oil, vinegar, sugar, salt and mayo.
  3. Toss dressing in bowl with pasta, spinach leaves, pine nuts and veggies.
  4. Refrigerate until serving.
  5. Enjoy!!
