Pumpkin Pie Cake

Prep: 10 min | Cook: 50-60 min | Servings: serves 15 to 24 depending on how big of pieces you want.
  • 1 large can pumpkin
  • 3 eggs beaten
  • 1 cup brown sugar
  • 1 cup evaporated milk
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 2 sticks melted margarine
  • 1 spice cake mix
  • 1 cup chopped pecans

Mix together the first 9 ingredients and place in a 9×13″ cake pan. Sprinkle the cake mix over the entire thing. Sprinkle the pecans over the cake mix. Drizzle the melted butter over the whole thing. Put in pre-heated oven and bake at 350 F for 50 to 60 minutes. Should be kind of crispy on top but watch closely the last few minutes so not to burn it.
