Chocolate Zucchini Bread

Prep: 15 minutes | Cook: 1 hour | Servings: 2 loaves or 4 mini loaves

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 2 cups shredded zucchini
  • 2 1/2 cups flour
  • 1/2 cup baking cocoa
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking powder

Directions

  1. Beat eggs, oil, sugar, and vanilla.
  2. Add zucchini.
  3. Add dry ingredients and mix well.
  4. Pour into 2 greased loaf pans (or 4 small greased loaf pans).
  5. Bake at 350 F for 1 hour.
