Chicken, Apple & Cranberry Wrap

  • 4 flour tortillas
  • 4 cups shredded rotisserie chicken
  • 1/4 cup red onion, diced
  • 1 stalk celery, diced
  • 1/4 cup dried sweetened cranberries
  • 1/2 cup mayonnaise
  • 1/2 teaspoon dry mustard
  • 1 cup shredded lettuce
  • 1/2 cup feta crumbles
  • 1 apple, cored, halved, and thinly sliced
    Cosmic Crisp or Granny Smith apples work well

Apple Cider Vinaigrette:

  • 3 tablespoons extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

In a large bowl, combine the shredded chicken, red onion, celery, dried cranberries, mayonnaise, and dry mustard. Stir until well mixed. In a small jar or bowl, combine the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper, shaking or whisking until fully emulsified.

Place about 1 cup of the chicken salad in the center of each tortilla. Top with shredded lettuce, feta crumbles, and thin apple slices. Drizzle with the apple cider vinaigrette, then wrap tightly and serve immediately.
